The raw agave juice is harvested from Blue Agave, cactus-like plant that grows in the Jalisco region of Mexico. In order for the agave plant to secrete its nectar into the center of the plant, rather than into flowers the harvesters slice off the top of the plant, hollow out its core and cap it with a stone. The juice collects in the hollow center for several days, after which it is removed by ladle, one plant at a time.
Agave's sweet but mild flavor makes it very easy to use for just about everything in place of sugar. So go ahead and try it, you might be pleasantly surprised! |
