Melt in your mouth raw walnut 'truffles'!

Walnuts are packed with good for the heart mono-unsaturated fats. They contain omega-3 essential fatty acids which help to improve the good to bad cholesterol ratio. Omega-3 fats also help the membranes of all the cells in our body function better. |

Ingredients (6 to 8 truffles) |
|
1 cup raw walnuts
Dozen pitted prunes
1 cup fresh squeezed orange juice
3 tbs raw agave nectar
1/2 cup raw shredded coconut
|

 Method |
- Soak prunes in fresh squeezed orange juice for 1 to 2 hours
- Fine chop walnuts
- Drain prunes, save juice on side
- In a blender blend the walnuts, prunes, agave nectar, and enough orange juice to be able to pulse on chop till the mixture becomes creamy (the mixture should not be liquid, just soft)
- Taste and adjust the sweetness with agave nectar
- Form small round balls out of the mixture (keeping your hands clean and moist with water)
- Place the shredded coconut in a small bowl
- Roll the balls in bowl coating evenly with coconut
- Chill in the freezer for one hour before serving
